- Step 2: Prepare the Marinade. In a large mixing bowl, combine the extra virgin olive oil, lemon zest, and lemon juice. The acid from the lemon is essential as it tenderizes the chicken while imparting a fresh flavor.
- Step 3: Add the Aromatics. Mix in the minced garlic, chopped parsley, dried oregano, salt, dried thyme, ground black pepper, and crushed red pepper (if using). Use a whisk to combine all the ingredients until they are well incorporated.
- Step 4: Marinate the Chicken. Place the boneless chicken breasts or thighs into a resealable plastic bag or a container. Pour the marinade over the chicken, ensuring it’s fully coated.
