Ingredients

For the Marinade:
  • 3-4 pounds boneless chicken breasts or thighs
  • 1 cup extra virgin olive oil
  • 2 whole lemons zested and juiced
  • 4-5 cloves garlic minced
  • 1 cup chopped parsley
  • 1 tablespoon dried oregano
  • 2 teaspoons salt
  • 1 teaspoon dried thyme
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon crushed red pepper (optional)

Equipment

  • Mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Resealable Plastic Bag or Container

Method

Instructions:
  1. Step 1: Gather Your Ingredients. Start by measuring out all the ingredients listed above. Having everything ready will make the process smoother.
  2. Step 2: Prepare the Marinade. In a large mixing bowl, combine the extra virgin olive oil, lemon zest, and lemon juice. The acid from the lemon is essential as it tenderizes the chicken while imparting a fresh flavor.
  3. Step 3: Add the Aromatics. Mix in the minced garlic, chopped parsley, dried oregano, salt, dried thyme, ground black pepper, and crushed red pepper (if using). Use a whisk to combine all the ingredients until they are well incorporated.
  4. Step 4: Marinate the Chicken. Place the boneless chicken breasts or thighs into a resealable plastic bag or a container. Pour the marinade over the chicken, ensuring it’s fully coated. Seal the bag or cover the container and refrigerate for at least 1 hour, but ideally, let it marinate for 4 hours or overnight for maximum flavor.
  5. Step 5: Cook Your Chicken. Once marinated, remove the chicken from the fridge. Cook it using your preferred method—grilling, baking, or pan-frying—until it reaches an internal temperature of 165°F (75°C).

Notes

  • For the best flavor, aim for at least 4 hours of marination.
  • Use fresh lemon zest for a more vibrant flavor.
  • Store leftover marinade in the fridge for up to 5 days, but do not reuse marinade that has been in contact with raw chicken.
