Cooking Instructions:
- In a large mixing bowl, combine the self-raising flour, sugar, baking powder, and salt. Whisk these dry ingredients together until well combined.
- In another bowl, whisk together the egg, vanilla extract, and milk until thoroughly blended. Then add the melted butter and mix again until incorporated.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined; it's okay if there are a few lumps. Avoid over-mixing to keep your pancakes fluffy!
- In a small bowl, mix the cocoa powder with the additional 2 tablespoons of milk until smooth. Take a small portion of the pancake batter and mix it with the cocoa mixture until combined.
- Preheat your non-stick skillet or griddle over medium heat. Lightly grease it with a bit of butter or cooking spray.
- Pour about 1/4 cup of the plain pancake batter onto the skillet. Then, using a spoon, add a dollop of the chocolate batter on top of the pancake. Use a toothpick or the back of a fork to swirl the two batters together, creating a marble effect.
- Cook the pancakes for about 2-3 minutes on one side, or until bubbles start to form on the surface. Flip and cook for another 2 minutes on the other side until golden brown.
- Remove the pancakes from the skillet and keep them warm in a low oven while you repeat with the remaining batter. Serve with your favorite toppings, such as fresh berries, whipped cream, or syrup, and enjoy your beautiful Zebra Marble Pancakes!
Notes
- Make sure to not over-mix the batter; a few lumps are okay!
- If the batter is too thick, add a splash more milk to reach your desired consistency.
- For a more intense chocolate flavor, increase the cocoa powder to 3 tablespoons.
