Ingredients
  

For the Pancake Batter:
  • 2 cups self-raising flour (for that perfect fluffiness)
  • 2 tablespoons sugar (to add a hint of sweetness)
  • 2 teaspoons baking powder (for extra lift)
  • 1 pinch salt (to enhance the flavors)
  • 1 large egg (to bind the ingredients)
  • 1 teaspoon pure vanilla extract (for a warm, inviting flavor)
  • 1 3/4 cups skim milk or unsweetened almond milk (for the perfect batter consistency)
  • 2 tablespoons reduced-fat butter (melted, for richness)
  • 2 tablespoons unsweetened cocoa powder (for the chocolatey swirl)
  • 2 tablespoons milk (to mix with cocoa powder)

Method
 

Cooking Instructions:
  1. In a large mixing bowl, combine the self-raising flour, sugar, baking powder, and salt. Whisk these dry ingredients together until well combined.
  2. In another bowl, whisk together the egg, vanilla extract, and milk until thoroughly blended. Then add the melted butter and mix again until incorporated.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; it's okay if there are a few lumps. Avoid over-mixing to keep your pancakes fluffy!
  4. In a small bowl, mix the cocoa powder with the additional 2 tablespoons of milk until smooth. Take a small portion of the pancake batter and mix it with the cocoa mixture until combined.
  5. Preheat your non-stick skillet or griddle over medium heat. Lightly grease it with a bit of butter or cooking spray.
  6. Pour about 1/4 cup of the plain pancake batter onto the skillet. Then, using a spoon, add a dollop of the chocolate batter on top of the pancake. Use a toothpick or the back of a fork to swirl the two batters together, creating a marble effect.
  7. Cook the pancakes for about 2-3 minutes on one side, or until bubbles start to form on the surface. Flip and cook for another 2 minutes on the other side until golden brown.
  8. Remove the pancakes from the skillet and keep them warm in a low oven while you repeat with the remaining batter. Serve with your favorite toppings, such as fresh berries, whipped cream, or syrup, and enjoy your beautiful Zebra Marble Pancakes!

Notes

  • Make sure to not over-mix the batter; a few lumps are okay!
  • If the batter is too thick, add a splash more milk to reach your desired consistency.
  • For a more intense chocolate flavor, increase the cocoa powder to 3 tablespoons.
