Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 eggs
  • 2 cups vanilla yogurt
  • 1/4 cup water
  • Optional: Semisweet chocolate chips, dried cranberries, sliced ripe bananas, and coarsely chopped pecans

Method
 

  1. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and baking soda.
  2. In another bowl, whisk together the eggs, vanilla yogurt, and water until well combined.
  3. Gradually add the wet mixture to the dry ingredients, stirring gently with a spatula.
  4. If you’d like to include optional mix-ins, fold them into the batter now.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease the surface if desired.
  6. Using a 1/4 cup measuring cup, pour the batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface.
  7. Flip and cook for another 1-2 minutes until golden brown.
  8. Serve warm with your favorite toppings.

Notes

  • Let the batter rest for about 5-10 minutes for fluffier pancakes.
  • Keep your skillet at a consistent medium heat to prevent burning.
  • The batter can be easily doubled or halved for different serving sizes.
