Ingredients
  

For the Garlic Base:
  • 2 bulbs garlic peeled and minced
  • 1 teaspoon olive oil
  • 1 pinch salt
For the Cheese Mixture:
  • 8 ounces mascarpone cheese at room temperature
  • 0.5 cup freshly chopped basil leaves
  • 2 tablespoons freshly chopped rosemary
  • 2 tablespoons freshly chopped thyme leaves
  • 2 tablespoons freshly chopped oregano leaves
  • 1 tablespoon freshly chopped parsley
  • 8 ounces sharp provolone cheese freshly grated
  • 4 ounces mozzarella cheese freshly grated
  • 2 ounces parmesan cheese freshly grated
For the Sandwiches:
  • 8 slices Italian or sourdough bread thick slices

Method
 

Instructions:
  1. Start by peeling and mincing the garlic from the two bulbs. Heat the olive oil in a skillet over medium heat, then add the minced garlic and a pinch of salt. Sauté until fragrant, about 1-2 minutes, being careful not to let it burn.
  2. In a mixing bowl, combine the mascarpone cheese, sautéed garlic, and all the freshly chopped herbs: basil, rosemary, thyme, oregano, and parsley. Stir until well blended. Then, fold in the grated provolone, mozzarella, and Parmesan cheese until evenly mixed.
  3. Take a slice of your chosen bread and spread a generous layer of the cheese mixture on one side. Top it with another slice of bread to complete the sandwich. Repeat this process until all the mixture is used.
  4. Heat a clean skillet over medium heat. You can add a little more olive oil if desired. Place the sandwiches in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. You may need to press down gently with a spatula to ensure even grilling.
  5. Once your sandwiches are grilled to perfection, remove them from the skillet. Let them cool for a minute, then slice them in half. Serve warm and enjoy the cheesy, herb-filled goodness of your White Pizza Grilled Cheese!
