Ingredients
  

For the Pastry:
  • 2 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1/4 cup vegetable shortening
  • 1/4 cup cold salted butter
  • 1 large egg beaten
  • 1/4 cup whole milk
For the Filling:
  • 1/2 pound ground beef (not lean)
  • 1/4 cup diced russet potato
  • 1/4 cup julienned carrot
  • 2 tablespoons chopped yellow onion
  • 1 teaspoon minced parsley
  • 1 teaspoon curry powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cayenne pepper
  • 2 tablespoons chicken broth
  • 1/2 teaspoon lime juice
  • 1 cup finely diced Granny Smith apple
  • 1 tablespoon lime juice
  • 1 cup finely diced mango
  • 1 tablespoon minced jalapeno
  • 1 tablespoon minced red bell pepper
  • 1 tablespoon minced cilantro
For the Dipping Sauce:
  • 1 cup sour cream
  • 1/4 cup diced tomato
  • 1 tablespoon chopped red onion
  • 1 tablespoon minced red bell pepper
  • 1 tablespoon chopped cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cayenne pepper
  • A pinch ground cumin

Method
 

Stepwise Method: West Indies Patties
  1. Step 1: Prepare the Pastry
    In a large mixing bowl, combine the all-purpose flour and salt. Add the vegetable shortening and cold salted butter, using a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. In a separate bowl, whisk together the beaten egg and whole milk. Gradually add this mixture to the flour mixture, stirring until a dough forms. Knead lightly on a floured surface until smooth. Wrap in plastic wrap and refrigerate for about 30 minutes.
  2. Step 2: Make the Filling
    In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and add the diced potato, julienned carrot, chopped onion, and minced parsley. Stir in the curry powder, paprika, salt, cayenne pepper, chicken broth, and lime juice. Cook for about 5-7 minutes until the vegetables are tender. Remove from heat and fold in the diced apple, mango, jalapeno, red bell pepper, and cilantro. Allow the filling to cool slightly.
  3. Step 3: Assemble the Patties
    Preheat your oven to 375°F (190°C). On a floured surface, roll out the chilled dough to about 1/8-inch thick. Using a round cutter, cut out circles of dough (approximately 4-5 inches in diameter). Spoon a heaping tablespoon of filling onto the center of each circle. Fold the dough over to create a half-moon shape. Seal the edges by crimping with a fork. Brush the tops with the remaining beaten egg.
  4. Step 4: Fry the Patties
    In a deep skillet, heat the vegetable oil over medium-high heat. Carefully add the patties in batches, frying until golden brown, about 3-4 minutes per side. Use a slotted spoon to transfer the patties to a paper towel-lined plate to drain excess oil.
  5. Step 5: Serve with Dipping Sauce
    In a small bowl, mix together the sour cream, diced tomato, red onion, red bell pepper, cilantro, salt, cayenne pepper, and ground cumin. Serve the golden West Indies Patties warm with the creamy dipping sauce on the side.

  • For a lighter filling, substitute ground beef with chicken or turkey.
