Stepwise Method: West Indies Patties
- Step 1: Prepare the PastryIn a large mixing bowl, combine the all-purpose flour and salt. Add the vegetable shortening and cold salted butter, using a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. In a separate bowl, whisk together the beaten egg and whole milk. Gradually add this mixture to the flour mixture, stirring until a dough forms. Knead lightly on a floured surface until smooth. Wrap in plastic wrap and refrigerate for about 30 minutes.
- Step 2: Make the FillingIn a skillet over medium heat, cook the ground beef until browned. Drain excess fat and add the diced potato, julienned carrot, chopped onion, and minced parsley. Stir in the curry powder, paprika, salt, cayenne pepper, chicken broth, and lime juice. Cook for about 5-7 minutes until the vegetables are tender. Remove from heat and fold in the diced apple, mango, jalapeno, red bell pepper, and cilantro. Allow the filling to cool slightly.
- Step 3: Assemble the PattiesPreheat your oven to 375°F (190°C). On a floured surface, roll out the chilled dough to about 1/8-inch thick. Using a round cutter, cut out circles of dough (approximately 4-5 inches in diameter). Spoon a heaping tablespoon of filling onto the center of each circle. Fold the dough over to create a half-moon shape. Seal the edges by crimping with a fork. Brush the tops with the remaining beaten egg.
- Step 4: Fry the PattiesIn a deep skillet, heat the vegetable oil over medium-high heat. Carefully add the patties in batches, frying until golden brown, about 3-4 minutes per side. Use a slotted spoon to transfer the patties to a paper towel-lined plate to drain excess oil.
- Step 5: Serve with Dipping SauceIn a small bowl, mix together the sour cream, diced tomato, red onion, red bell pepper, cilantro, salt, cayenne pepper, and ground cumin. Serve the golden West Indies Patties warm with the creamy dipping sauce on the side.
Notes
- For a lighter filling, substitute ground beef with chicken or turkey.
- Experiment with seasonal ingredients like zucchini in summer or butternut squash in winter.
- These patties can be frozen before frying for later enjoyment.
