Weeknight Baked Turkey Tacos.

Ingredients
  

  • 1 pound lean ground turkey
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon freshly cracked pepper
  • 12 to 15 count hard taco shells
  • 1 to 2 cups grated Chihuahua or cheddar cheese
  • 1 cup shredded lettuce
  • 1 count chopped avocado
  • 1 pint cherry tomatoes, quartered
  • 1 count sweet onion, diced
  • ½ cup cilantro, chopped
  • 1 count lime, juiced
  • a pinch count salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C) to ensure your taco shells get crispy and your cheese melts perfectly.
  2. In a large skillet over medium heat, add the lean ground turkey and sauté for about 5-7 minutes or until browned and fully cooked through.
  3. Once the turkey is cooked, sprinkle in the ground cumin, smoked paprika, garlic powder, chili powder, salt, and freshly cracked pepper. Stir well and let the spices infuse for about 2 minutes.
  4. While the turkey is cooking, arrange your hard taco shells on a baking sheet. Optionally, spray them lightly with cooking oil for extra crispiness.
  5. Spoon the seasoned turkey mixture into each taco shell, filling them generously.
  6. Sprinkle the grated Chihuahua or cheddar cheese over the filled taco shells generously.
  7. Place the baking sheet in the preheated oven and bake for about 10-15 minutes, until the cheese is melted and the taco shells are golden brown.
  8. While the tacos are baking, prepare your toppings by mixing chopped avocado, quartered cherry tomatoes, diced sweet onion, and cilantro in a bowl. Drizzle with lime juice and a pinch of salt and pepper.
  9. Remove the tacos from the oven and let them cool slightly. Serve with the fresh toppings on the side for customization. Enjoy!

  • Feel free to substitute the turkey with ground beef or a plant-based alternative.
  • Make the turkey mixture ahead of time and reheat when ready to serve.
