Ingredients

  • 16 oz Velveeta Queso Blanco
  • 15.5 oz Fire Roasted Rotel Tomatoes and Chilis
  • 1 cup cooked ground beef or sausage optional
  • Chopped cilantro for garnish
  • Sliced jalapeños for extra kick

Equipment

  • Medium saucepan
  • Wooden spoon or spatula
  • Measuring cups
  • Serving bowl
  • Microwave (optional)

Method

  1. Start by gathering all your ingredients and equipment. If you opt to include ground beef or sausage, cook it beforehand and set it aside.
  2. Cut the Velveeta into small cubes and place them in a medium saucepan.
  3. Pour in the Fire Roasted Rotel Tomatoes and Chilis, including the juices. Stir to combine with the Velveeta.
  4. Place the saucepan over medium heat. Stir the mixture continuously until the Velveeta has completely melted and merged with the tomatoes, creating a smooth dip.
  5. If you’re adding cooked ground beef or sausage, stir it in at this point. You can also add jalapeños for an extra kick if desired.
  6. Once the dip is creamy and well combined, transfer it to a serving bowl. Garnish with chopped cilantro, and serve hot with tortilla chips, crackers, or fresh veggies.

Notes

  • For an extra creamy dip, add a splash of milk or cream while melting the cheese.
  • Experiment with different brands of diced tomatoes for unique flavor notes.
  • Make it ahead of time and reheat before serving for a stress-free gathering.
