Ingredients

  • 24 ounces frozen spinach, thawed the star ingredient, packed with nutrients

Method
 

  1. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes or until the onions become translucent. Stir in the minced garlic and cook for an additional minute, just until fragrant.
  2. While the onions and garlic are cooking, make sure your frozen spinach is thoroughly thawed and drained. Squeeze out any excess moisture to prevent a watery dip.
  3. In a large mixing bowl, combine the sautéed onion and garlic mixture with the dairy-free cream cheese and dairy-free sour cream. Use a spatula or wooden spoon to mix until smooth and creamy.
  4. Fold the prepared spinach into the cream cheese mixture. Make sure the spinach is evenly distributed throughout the dip.
  5. Add the paprika and salt to the mixture. Stir well to combine all the flavors.
  6. For the best flavor, cover the bowl with plastic wrap and let the dip chill in the refrigerator for at least 30 minutes. This allows the flavors to meld beautifully. Serve with your favorite chips, crackers, or fresh veggies.
