Directions:
  1. Step 1: Prepare the Marinade - In a large mixing bowl, combine the orange juice, whole grain mustard, balsamic vinegar, olive oil, dried rosemary, minced garlic, salt, and pepper. Whisk everything together until well blended.
  2. Step 2: Marinate the Veal Chops - Place your thick-cut veal chops in the bowl with the marinade. Ensure each chop is fully coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.
  3. Step 3: Preheat Your Cooking Surface - While the chops are marinating, preheat your grill pan or skillet over medium-high heat. This will create a nice sear on the chops, locking in their juices.
  4. Step 4: Cook the Veal Chops - Once the pan is hot, remove the chops from the marinade (reserve the marinade) and place them in the pan. Sear for about 4-5 minutes on each side, or until the internal temperature reaches 145°F for medium-rare.
  5. Step 5: Glaze with Marinade - In the last minute of cooking, pour the reserved marinade over the chops and let it simmer for a minute to create a delicious glaze.
