Instructions:
- Step 1: Prepare the Chicken. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
- Step 2: Sauté the Vegetables. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 2 minutes until translucent. Add the diced carrots and celery, cooking for an additional 3-4 minutes until softened.
- Step 3: Add the Chicken. Push the sautéed vegetables to the side and add the seasoned chicken breasts. Sear for about 5 minutes on each side until golden brown.
- Step 4: Incorporate the Tomatoes. Once browned, pour in the crushed tomatoes. Stir to coat the chicken and bring to a simmer.
- Step 5: Cook Through. Cover and reduce heat to low. Let simmer for about 15-20 minutes until the chicken is cooked through (internal temperature of 165°F).
- Step 6: Add Cheese and Basil. Sprinkle the parmesan cheese over the top. Cover for a few minutes to melt the cheese. Garnish with fresh basil before serving.
