Ingredients
  

For the Chicken:
  • 1 pound boneless, skinless chicken breasts about 3 whole breasts
  • 1 tablespoon olive oil for sautéing
  • 1 cup diced onion about 1 large onion, for sweetness
  • 1 cup diced carrot about 1 large carrot, for color and nutrition
  • 1 cup diced celery about 1 large celery rib, for crunch
  • 1 14.5-ounce can crushed tomatoes with basil, oregano, and garlic
  • ½ cup grated parmesan cheese for a cheesy finish
  • 1 tablespoon chopped fresh basil for garnish and flavor
  • ½ teaspoon salt to taste
  • ½ teaspoon ground black pepper to taste

Method
 

Instructions:
  1. Step 1: Prepare the Chicken. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
  2. Step 2: Sauté the Vegetables. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 2 minutes until translucent. Add the diced carrots and celery, cooking for an additional 3-4 minutes until softened.
  3. Step 3: Add the Chicken. Push the sautéed vegetables to the side and add the seasoned chicken breasts. Sear for about 5 minutes on each side until golden brown.
  4. Step 4: Incorporate the Tomatoes. Once browned, pour in the crushed tomatoes. Stir to coat the chicken and bring to a simmer.
  5. Step 5: Cook Through. Cover and reduce heat to low. Let simmer for about 15-20 minutes until the chicken is cooked through (internal temperature of 165°F).
  6. Step 6: Add Cheese and Basil. Sprinkle the parmesan cheese over the top. Cover for a few minutes to melt the cheese. Garnish with fresh basil before serving.
