Ingredients
  

For the Sandwich:
  • 2 slices whole wheat bread toasted
  • 3 tablespoons plain Greek yogurt
  • 1/2 cup marinated artichokes chopped and patted dry
  • 1 tablespoon basil pesto
  • 1 1/2 tablespoons green onion thinly sliced
  • 2 slices white cheddar cheese or provolone, havarti, or Swiss
  • 1 handful fresh spinach leaves
  • 1 sliced deli turkey or chicken
  • 1 sliced tomato
  • 1 sliced cucumber
  • to taste salt and pepper
  • optional sprouts

Method
 

Instructions:
  1. In a mixing bowl, combine the plain Greek yogurt, chopped marinated artichokes, and thinly sliced green onion. Add in the tablespoon of basil pesto and mix until well combined.
  2. Toast your whole wheat bread slices until they're golden brown and crispy.
  3. Spread a generous layer of the artichoke mixture on one slice of the toasted bread. Layer on the fresh spinach leaves, followed by sliced turkey or chicken, tomato, cucumber, and top with cheese.
  4. Sprinkle with a little salt and pepper. If using sprouts, add them on top. Place the second slice of toasted bread on top.
  5. Cut the sandwich in half for easier handling, and serve immediately.

Notes

  • For a gluten-free version, swap the whole wheat bread with gluten-free bread.
  • Use low-fat Greek yogurt for a lighter option.
  • Add extra veggies like bell peppers for more flavor and nutrition.
