Ingredients
  

  • 1 lb ground beef look for lean beef
  • 1 yellow onion, chopped adds sweetness and depth
  • 1/2 cup green chili enchilada sauce choose based on spice preference
  • 1 tbsp taco seasoning store-bought or homemade
  • 1 tbsp lime juice freshly squeezed is best
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp cayenne pepper for extra kick
  • 1 can refried beans 16 oz can, look for brand without lard
  • 4 - 6 tostada shells store-bought or homemade
  • Optional garnishes: shredded lettuce, salsa, avocado, Mexican cheese, Mexican crema, chopped cilantro

Method
 

  1. Begin by chopping the yellow onion and gathering all your ingredients. This will make the cooking process smooth and efficient.
  2. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it cooks. This should take about 5-7 minutes.
  3. Once the beef is browned, add the chopped yellow onion to the skillet. Sauté for another 3-4 minutes until the onions are translucent and fragrant.
  4. Stir in the taco seasoning, green chili enchilada sauce, lime juice, salt, and cayenne pepper. Mix well and let it simmer for about 5 minutes, allowing the flavors to meld together.
  5. In a separate pot, gently heat the refried beans over low heat, stirring occasionally until warmed through. This will provide a creamy layer on your tostadas.
  6. Take a tostada shell and spread a generous layer of refried beans on top. Then, add a scoop of the ground beef mixture.
  7. Top your tostadas with shredded lettuce, salsa, slices of avocado, a sprinkle of Mexican cheese, a drizzle of Mexican crema, and a sprinkle of chopped cilantro.
  8. Serve your tostadas on a platter, and enjoy this colorful, flavor-packed dish with family and friends!
