Ingredients
  

  • 1 whole rotisserie chicken (about 5 cups chopped chicken)
  • 1 cup mayonnaise
  • 1 cup chopped celery
  • 1 cup diced apple (a firm variety such as Granny Smith)
  • ½ cup sweet pickle relish
  • ½ cup toasted almonds
  • ½ cup chopped scallions
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh chopped dill

Method
 

  1. Start by removing the skin from the rotisserie chicken and shredding the meat. You should have about 5 cups of chopped chicken. Place it in a large mixing bowl and set aside.
  2. Chop the celery, dice the apple, and slice the scallions. Make sure to keep the apple pieces fairly small to mix well with the other ingredients. This will add a nice crunch and sweetness to your chicken salad.
  3. In a separate bowl, combine the mayonnaise, Dijon mustard, dill, and sweet pickle relish. Stir until smooth and creamy. This dressing is what brings all the flavors together, so taste and adjust seasoning with salt and pepper as needed.
  4. Add the chopped chicken, celery, apples, scallions, and toasted almonds to the bowl with the dressing. Gently fold everything together until all the ingredients are well coated in the dressing. Be careful not to overmix, as you want to keep some of the texture.
  5. Cover the bowl with plastic wrap or transfer the chicken salad to an airtight container. Refrigerate for at least 30 minutes before serving. This chilling time helps all the flavors meld together beautifully.
