Ingredients
  

For the Skillet:
  • 3 medium potatoes peeled and sliced
  • 2 tbsp olive oil
  • 1 medium red pepper chopped into pieces
  • 1 medium green pepper chopped into pieces
  • 1 medium red onion chopped into pieces
  • 1 cup sliced kielbasa
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • Salt
  • Pepper
  • Chopped scallions to garnish

Method
 

Instructions:
  1. Start by peeling and slicing the medium potatoes into thin rounds. Chop the red and green peppers, as well as the red onion, into bite-sized pieces. Slice the kielbasa into rounds to maximize flavor in every bite.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced potatoes and season with salt and pepper. Cook for about 10 minutes, stirring occasionally, until the potatoes are golden brown and crispy on the outside.
  3. Once the potatoes are cooked, add the chopped red pepper, green pepper, and red onion to the skillet. Stir everything together and cook for an additional 5 minutes until the vegetables are tender and fragrant.
  4. Next, add the sliced kielbasa to the skillet. Cook for about 5 minutes, allowing the kielbasa to brown slightly and infuse its savory flavor into the vegetables.
  5. Using a spatula, create two small wells in the mixture. Crack an egg into each well, being careful not to break the yolk. Season the eggs with a pinch of salt and pepper.
  6. Sprinkle the shredded mozzarella cheese over the entire skillet, ensuring the eggs are also covered. Cover the skillet with a lid and let it cook for about 5 minutes, or until the cheese is melted and the eggs are cooked to your liking.
  7. Once everything is cooked, remove the skillet from the heat. Garnish with chopped scallions for a fresh touch. Serve hot directly from the skillet for a rustic and inviting meal.
