Ingredients

  • 1 small to medium head of cauliflower (should yield 2 to 3 cups once processed)
  • 1/4 cup shredded Parmesan cheese
  • 1/4 cup mozzarella cheese
  • 1 large egg
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon minced basil or rosemary (or dried)
  • 1/2 teaspoon minced oregano (or dried)
For Toppings:
  • 1 cup marinara sauce
  • 1-2 cups mozzarella cheese for topping

How to Make the Crust:
  1. Step 1: Prepare the Cauliflower. Preheat your oven to 425°F (220°C). Remove the leaves and stem from the cauliflower and cut it into smaller florets. Using a food processor, pulse the florets until they resemble rice or breadcrumbs.
  2. Step 2: Cook the Cauliflower Rice. Transfer the cauliflower rice to a microwave-safe bowl and cover it. Microwave for about 4-5 minutes, until tender. Let it cool for a few minutes.
  3. Step 3: Squeeze Out the Moisture. Place the cooked cauliflower in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as you can.
  4. Step 4: Combine Ingredients. In a mixing bowl, combine the drained cauliflower, Parmesan cheese, mozzarella cheese, egg, salt, garlic powder, basil, and oregano. Mix well.
  5. Step 5: Shape the Crust. Line your baking sheet with parchment paper. Transfer the cauliflower mixture to the sheet and shape it into a round pizza shape, about 1/4 inch thick.
  6. Step 6: Bake the Crust. Bake the crust for 25-30 minutes, until golden brown and firm. Watch it to avoid burning.
  7. Step 7: Add Toppings. Once baked, spread marinara sauce over the crust and sprinkle with mozzarella cheese and any desired toppings.
  8. Step 8: Final Bake. Return the pizza to the oven for an additional 10 minutes, or until the cheese is bubbly and melted.
