Taquitos with Cheese, Beans, and Green Chiles

Ingredients
  

  • 16 ounces refried beans (1 can)
  • 4.5 ounces chopped green chiles (1 can)
  • 1 ounce taco seasoning (1 packet)
  • 1 cup shredded Mexican blend cheese
  • 1/2 cup chopped fresh cilantro
  • 24 (3-inch) flour tortillas (2 packages)
  • Canola oil for frying

Method
 

  1. Begin by opening your can of refried beans and transferring them to a mixing bowl. Add the chopped green chiles and taco seasoning to the bowl. Mix everything together until well combined.
  2. Next, incorporate the shredded Mexican blend cheese and chopped fresh cilantro into the bean mixture. Stir until the cheese is evenly distributed.
  3. Warm the flour tortillas slightly in the microwave for about 30 seconds. Take a tortilla and spoon a generous amount of the filling onto one end. Roll the tortilla tightly around the filling, tucking in the sides as you go.
  4. In a large skillet, pour in enough canola oil to cover the bottom of the pan. Heat the oil over medium-high heat until it shimmers.
  5. Carefully place a few taquitos in the hot oil, frying them for about 2-3 minutes on each side, or until they are golden brown and crispy.
  6. Once fried, remove the taquitos from the skillet and place them on a plate lined with paper towels to absorb any excess oil. Serve them hot with your favorite dipping sauces.

Notes

  • For a spicier kick, add jalapeños or cayenne pepper to the filling.
  • To bake instead of fry, preheat your oven to 425°F and bake for 15-20 minutes.
  • Leftover taquitos can be stored in an airtight container in the refrigerator for up to 3 days.
