Ingredients
  

For the Noodles:

For the Sauce:
  • 1/2 cup chicken broth or vegetable broth for a vegetarian option
  • 2 tablespoons dark soy sauce or oyster sauce
  • 2 teaspoons light soy sauce
  • 1 teaspoon Chinese black vinegar or young balsamic vinegar
  • 1/2 teaspoon Chinese five-spice powder
  • 1 tablespoon brown sugar
  • 2 teaspoons cooking oil
  • 1/2 onion chopped
  • 1 pound ground pork or ground beef, chicken, or turkey
  • 2 cloves garlic finely minced
  • 8 ounce can bamboo shoots drained and diced
  • 4 ounces fresh shiitake mushrooms diced
  • 1 stalk green onion chopped for garnish

Instructions
  1. Step 1: Cook the Noodles - Begin by cooking your choice of noodles or rice according to the package instructions. Drain and set aside, ensuring they are ready to absorb the flavors of the meat sauce later.
  2. Step 2: Sauté the Aromatics - In a large skillet or wok, heat the cooking oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Next, stir in the minced garlic and cook for an additional minute, until fragrant.
  3. Step 3: Brown the Meat - Add the ground pork (or your choice of meat) to the skillet. Break it apart with a wooden spoon and cook until browned and no longer pink, approximately 5-7 minutes.
  4. Step 4: Incorporate the Vegetables - Once the meat is browned, stir in the diced bamboo shoots and shiitake mushrooms. Cook for about 3-4 minutes until the mushrooms are tender.
  5. Step 5: Create the Sauce - Pour in the chicken broth, dark soy sauce, light soy sauce, black vinegar, five-spice powder, and brown sugar. Stir well to combine all the ingredients. Bring the mixture to a gentle simmer and let it cook for about 5-10 minutes, allowing the flavors to meld together.
  6. Step 6: Combine with Noodles - Add the cooked noodles or rice to the skillet, tossing everything together until the noodles are well coated with the sauce. If the mixture appears dry, add a splash more chicken broth.
  7. Step 7: Serve and Garnish - Remove from heat and serve immediately. Garnish with chopped green onions for a pop of color and freshness.
