  • 1 cup shredded low-fat mozzarella cheese
  • 1 spray nonstick spray
  • 6-7 inch white tortillas

Method
 

  1. Start by measuring out your cheeses—1 cup each of shredded cheddar, Monterey Jack, and low-fat mozzarella. Mix them together in a bowl, ensuring an even distribution of flavors.
  2. Place your nonstick skillet on medium heat and spray it lightly with nonstick spray. This will keep the tortillas from sticking and make for easier flipping.
  3. Take a tortilla and place a generous amount of the cheese mixture in the center. Fold the sides of the tortilla over the cheese, then roll it up tightly from the bottom to the top, creating a snug little package.
  4. Once your skillet is heated, place the rolled tortilla seam-side down in the skillet. Cook for 2-3 minutes until the underside is golden brown and the cheese begins to melt.
  5. Carefully flip the roll-up using your spatula and cook for an additional 2-3 minutes on the other side. You want both sides crispy and the cheese fully melted.
