  • 2 filet mignons (about 6-8 ounces each)
  • 1/2 teaspoon coarse sea salt and pepper
  • 2 tablespoons butter (for cooking the steak)
  • 1 tablespoon neutral oil (like canola or grapeseed)
  • 4 cloves garlic (smashed)
  • 4 sprigs fresh thyme leaves
  • 2 baby tomatoes on the vine (for garnish)
  • 1 serving your choice of greens or potatoes (like asparagus, spinach, or roasted potatoes)

  1. Step 1: Prepare the Herb Butter - In a bowl, mix the room temperature unsalted butter, minced garlic, lemon zest, thyme leaves, parsley, and a pinch of salt and pepper. Blend well until combined. This herb butter will add an incredible flavor to both the lobster and steak.
  2. Step 2: Prepare the Lobster Tails - If using frozen lobster tails, ensure they are fully thawed. Using kitchen shears, cut through the top shell of each lobster tail to expose the meat. Gently pull the meat out slightly, keeping it attached at the base. Rub the exposed meat with 1.5 tablespoons of the prepared herb butter and season with salt and pepper.
  3. Step 3: Cook the Lobster - Preheat your grill or broiler. Place the lobster tails on the grill or under the broiler, shell side down. Cook for 8-10 minutes, basting occasionally with the remaining herb butter, until the meat is opaque and cooked through.
  4. Step 4: Prepare the Steak - While the lobster is cooking, take the filet mignons out of the refrigerator and let them come to room temperature for about 30 minutes. This ensures even cooking. Season both sides of the steaks with coarse sea salt and pepper.
  5. Step 5: Sear the Steak - In a large skillet, heat the neutral oil over medium-high heat. Once hot, add the steaks to the skillet. Sear for 3-4 minutes on each side for medium-rare, adjusting the time based on your preferred doneness. In the last minute of cooking, add the butter, smashed garlic, and thyme sprigs to the pan. Baste the steaks with the melted butter for extra flavor.
  6. Step 6: Rest the Steak - Remove the steaks from the skillet and let them rest for about 5 minutes. This allows the juices to redistribute, ensuring a tender bite.
  7. Step 7: Plate Your Surf And Turf - On a serving platter, arrange the steak and lobster tails. Garnish with fresh herbs, a fig, and baby tomatoes for a pop of color. Serve alongside your choice of greens or roasted potatoes for a complete meal.
