Ingredients
  

  • 1 lb chorizo
  • 2 24 oz jars of marinara sauce store-bought or homemade
  • 1 14.5 oz can of diced tomatoes
  • 20 oz tortellini fresh or frozen
  • 3 oz sliced pepperoni
  • 2 oz sliced olives
  • 1 green bell pepper sliced
  • 1/2 medium red onion thinly sliced
  • 16 oz mozzarella cheese shredded

  • Large baking dish
  • Wooden spoon or spatula

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the chorizo. Cook until browned, about 5-7 minutes. Remove from heat.
  3. In the same skillet, add the sliced green bell pepper and red onion. Sauté for about 3-4 minutes until softened.
  4. Add the marinara sauce, diced tomatoes, and tortellini to the skillet. Stir until well combined.
  5. Transfer the mixture to a large baking dish. Top with pepperoni, olives, and mozzarella cheese.
  6. Cover with foil and bake for about 25 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden.
  7. Let the dish cool for 5-10 minutes before serving.

Notes

  • Store leftovers in an airtight container for up to 3-4 days.
  • This dish freezes well for up to 3 months; thaw before reheating.
