Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, add the chorizo. Cook until browned, about 5-7 minutes. Remove from heat.
In the same skillet, add the sliced green bell pepper and red onion. Sauté for about 3-4 minutes until softened.
Add the marinara sauce, diced tomatoes, and tortellini to the skillet. Stir until well combined.
Transfer the mixture to a large baking dish. Top with pepperoni, olives, and mozzarella cheese.
Cover with foil and bake for about 25 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden.
Let the dish cool for 5-10 minutes before serving.
