Ingredients

  • 1 cup unsweetened almond/coconut milk beverage Almond Breeze is a great choice for a creamy texture.
  • 3/4 cup fresh blueberries, blackberries, and raspberries A mix of these berries provides a burst of flavor and color.
  • 2 tbsp chia seeds These tiny seeds are the star of the show, thickening the pudding and adding essential nutrients.
  • 5-6 drops Nu-Naturals liquid stevia A natural sweetener that enhances the flavor without added sugar; feel free to substitute with honey or sugar to taste.

Equipment

  • Mixing bowl
  • Whisk or spoon
  • Measuring cups and spoons
  • Jar or Container

Method

  1. In a mixing bowl, combine 1 cup of unsweetened almond milk, 2 tablespoons of chia seeds, and 5-6 drops of Nu-Naturals liquid stevia. Stir well to ensure the chia seeds are evenly distributed throughout the liquid.
  2. Allow the mixture to sit for about 5 to 10 minutes. This resting time lets the chia seeds absorb the liquid and start to swell, creating that signature pudding-like texture.
  3. After the resting period, give the mixture another good stir to break up any clumps of chia seeds that may have formed.
  4. Gently fold in 3/4 cup of fresh blueberries, blackberries, and raspberries. The berries not only add flavor but also a beautiful pop of color to your pudding.
  5. Transfer the chia pudding into your jar or container and refrigerate for at least 2 hours, or ideally overnight. This allows the chia seeds to fully expand and the flavors to meld together beautifully.
  6. Once chilled, give the pudding a good stir before serving. You can top it with additional fresh berries, a drizzle of honey, or a sprinkle of nuts for added texture and flavor.

Notes

  • Store in an airtight container in the refrigerator for up to 4-5 days.
