Instructions:
- Begin by washing the strawberries, raspberries, and blackberries thoroughly. Halve the strawberries to make blending easier. Place all the berries in a blender or food processor and blend until smooth. You can strain the mixture through a fine-mesh sieve if you prefer a smoother texture, but it’s not necessary.
- In a small bowl, sprinkle the grass-fed gelatin powder over the cold water. Allow it to bloom for about 5 minutes. This step is crucial as it helps the gelatin dissolve properly, which will give your gummy bears the right texture.
- In a small saucepan, gently heat the berry puree over low-medium heat. Stir occasionally until it’s warm but not boiling. This will help to activate the flavors without compromising the nutrients.
- Once the berry puree is warm, remove it from the heat. Gradually whisk in the bloomed gelatin mixture until it’s fully incorporated. If you want to sweeten your gummies, add powdered erythritol to taste at this stage. Mix thoroughly to ensure even distribution.
- Carefully pour the gummy mixture into the silicone molds. A small measuring cup or dropper can help to avoid spills. Fill each cavity to the top for perfectly shaped gummy bears.
- Transfer the filled molds to the refrigerator and allow them to chill for at least 2-3 hours, or until the gummies are firm and set. Once they’re ready, gently pop them out of the molds.

- Store in an airtight container in the refrigerator for up to two weeks.
- These gummies freeze well; just thaw at room temperature when ready to eat.
