- Step 1: Preheat your oven to 350°F (175°C). This ensures that the bread bakes evenly.
- Step 2: Grease your loaf pan with coconut oil or line it with parchment paper to prevent sticking.
- Step 3: In a large mixing bowl, whisk together the white whole-wheat flour, cinnamon, baking soda, and salt.
- Step 4: In another bowl, mash the ripe bananas with a fork or potato masher until smooth.
- Step 5: Add the melted coconut oil, egg, and vanilla extract to the mashed bananas. Stir until well blended.
- Step 6: Pour the wet mixture into the bowl with the dry ingredients. Gently fold the two together until just combined.
- Step 7: Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
- Step 8: Bake the bread in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Step 9: Once baked, remove the bread from the oven and allow it to cool in the pan for about 10 minutes, then transfer to a wire rack.
Notes
- Use very ripe bananas with brown spots for the best sweetness.
- Don’t overmix; a few lumps are okay!
