- Step 1: Prepare the Pasta - Start by bringing a large pot of salted water to a boil. Add the jumbo pasta shells and cook them according to the package instructions until they are al dente, about 8-10 minutes. Once cooked, drain them in a colander and rinse with cold water to stop the cooking process. Set aside.
- Step 2: Make the Filling - In a mixing bowl, combine the ricotta cheese, grated pecorino cheese, grated garlic, dried oregano, lemon zest, red pepper flakes, sea salt, and freshly ground black pepper. Stir in the fresh spinach until everything is well combined.
- Step 3: Stuff the Shells - Preheat your oven to 350°F (175°C). Using a spoon or piping bag, carefully fill each jumbo pasta shell with the cheese and spinach mixture. Pack them generously!
- Step 4: Assemble in the Baking Dish - Spread a thin layer of marinara sauce on the bottom of a baking dish. Place the stuffed shells in the dish, opening side up. Spoon more marinara sauce over the top, ensuring each shell is well coated. Drizzle with extra-virgin olive oil and sprinkle with additional pecorino cheese.
- Step 5: Bake to Perfection - Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Step 6: Serve and Enjoy - Once out of the oven, let the stuffed shells sit for a few minutes. Garnish with chopped fresh parsley before serving. Pair with additional marinara sauce on the side!
