Preparation Steps:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, season the cubed chicken with salt and pepper. Ensure the chicken is evenly coated for the best flavor.
- In another bowl, whisk together the eggs until well beaten. In a separate shallow dish, place the Panko breadcrumbs.
- Dip each piece of chicken into the egg mixture, allowing any excess to drip off. Then, roll the chicken in the Panko breadcrumbs to coat evenly. Place the breaded chicken on the prepared baking sheet.
- Bake the chicken bites in the preheated oven for about 15-20 minutes or until golden brown and cooked through. The internal temperature should reach 165°F (75°C).
- While the chicken is baking, prepare the glaze. In a small saucepan over medium heat, combine honey, Sriracha, low sodium soy sauce, dark soy sauce, molasses, five-spice powder, and minced garlic. Stir occasionally until the mixture is heated through and slightly thickened.
- Once the chicken bites are done baking, remove them from the oven and drizzle the sticky sauce over them, tossing gently to coat each piece.
