Instructions
  1. Step 1: Preheat your oven to 350°F (175°C) for a perfect golden-brown finish.
  2. Step 2: In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until well combined.
  3. Step 3: In a large mixing bowl, cream the room temperature butter, light brown sugar, and granulated sugar together until light and fluffy.
  4. Step 4: Add the eggs one at a time, mixing well after each addition, then blend in the vanilla and almond extract.
  5. Step 5: Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined.
  6. Step 6: Gently fold in the chocolate chips, chopped pistachios, and dried cherries with a spatula.
  7. Step 7: Scoop the dough onto lined cookie sheets, leaving about 2 inches of space between each cookie.
  8. Step 8: Bake for 10-12 minutes, until the edges are lightly golden and the centers look slightly underbaked.
  9. Step 9: Let the cookies cool on the sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Chill the dough for an hour for enhanced flavors and texture.
  • Use coconut oil for a dairy-free alternative to butter.
