  • 2 cloves garlic, minced
  • 1/2 tsp crushed red pepper adjust to your heat preference
  • 2 medium carrots, sliced into thin rounds and halved
  • 1 1/2 cups riced cauliflower, fresh or frozen
  • 1 cup Jasmine Rice
  • 2 tbsp soy sauce plus more to taste
  • 1 tsp Asian fish sauce can be substituted with more soy sauce if preferred
  • 1/3 cup fresh chopped cilantro for garnish

Equipment

  • Large skillet
  • Cooking pot
  • Cutting board and knife
  • Mixing Spoon
  • Measuring cups and spoons

Method

Instructions:
  1. Step 1: Cook the Jasmine Rice. In a cooking pot, bring 2 cups of water to a boil. Add 1 cup of jasmine rice, a pinch of salt, and reduce the heat to low. Cover and simmer for about 15 minutes or until the water is absorbed and the rice is tender. Once done, remove from heat and let it sit covered for another 5 minutes. Fluff with a fork before serving.
  2. Step 2: Prepare the Beef Mixture. In a large skillet over medium heat, add the minced onion and sauté for 2-3 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.
  3. Step 3: Brown the Ground Beef. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
  4. Step 4: Add Vegetables and Seasoning. Stir in the chopped scallions, sliced carrots, riced cauliflower, and red bell pepper. Add the crushed red pepper, soy sauce, and fish sauce. Mix well and cook for another 5-7 minutes, until the vegetables are tender.
  5. Step 5: Combine Everything. Once the vegetables are cooked, taste and adjust the seasonings if needed. Stir in the fresh cilantro just before serving.
  6. Step 6: Serve. Serve the spicy Thai beef mixture over a bed of fluffy jasmine rice. Garnish with extra cilantro and sliced scallions if desired.

Notes

  • For a leaner option, consider using ground turkey or chicken instead of beef.
  • Feel free to substitute jasmine rice with quinoa or brown rice for a healthier alternative.
  • Leftovers can be stored in an airtight container for up to 3 days.
