Ingredients
  

  • 1 lb raw chicken cut into bite-sized pieces
  • 1 Tbsp oil (vegetable or olive)
  • ½ cup brown sugar for sweetness
  • ½ cup soy sauce to add depth
  • 2 to 3 Tbsp Sriracha adjust to your spice preference
  • 2 (3-oz) packages ramen noodles any flavor (discard the seasoning packet)
  • ½ cup cocktail peanuts for crunch
  • Green onions sliced, for garnish

Method
 

  1. Start by cutting the raw chicken into bite-sized pieces. This allows for even cooking and makes it easy to eat. Slice the green onions and set them aside for later.
  2. In a pot, bring water to a boil. Add the ramen noodles and cook according to package instructions, usually about 3-4 minutes. Once cooked, drain and set aside.
  3. In a large skillet or wok, heat the oil over medium heat. Add the chicken pieces and sauté until they are golden brown and cooked through, approximately 5-7 minutes. Stir occasionally to ensure even cooking.
  4. In a bowl, mix together the brown sugar, soy sauce, and Sriracha. Pour this mixture over the cooked chicken in the skillet. Stir to coat the chicken evenly and let it simmer for about 2-3 minutes, allowing the sauce to thicken slightly.
  5. Add the cooked ramen noodles to the skillet with the chicken and sauce. Toss everything together until the noodles are well coated in the spicy sauce. If needed, adjust the seasoning or add more Sriracha for extra heat.
  6. Sprinkle the cocktail peanuts over the noodle mixture and gently stir them in. This adds a wonderful crunch that complements the softness of the noodles and chicken.
  7. Divide the Spicy Sriracha Chicken Noodles into bowls and garnish with the sliced green onions. Serve hot and enjoy the explosion of flavors!

  • For a vegetarian version, replace the chicken with tofu or your favorite veggies.
