Ingredients
  

  • 1 pound hot breakfast sausage
  • 2.5 cups frozen tater tots
  • 3 green onions, sliced
  • 2.5 cups shredded Pepper Jack cheese
  • 10 (8-inch) flour tortillas
  • 5 large eggs
  • 1 cup whole milk
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon all-purpose flour
  • Salsa, sour cream, and chopped fresh cilantro optional toppings

Method
 

  1. Preheat your oven to 375°F (190°C) for even baking.
  2. In a large skillet over medium heat, cook the hot breakfast sausage until browned, about 5-7 minutes. Drain excess grease.
  3. In a mixing bowl, whisk together eggs, whole milk, salt, black pepper, and flour. Add cooked sausage, tater tots, green onions, and 1 ½ cups cheese. Stir to combine.
  4. Warm tortillas in the microwave for 15-20 seconds. Fill each tortilla with the mixture, roll tightly, and place seam-side down in a greased baking dish.
  5. Sprinkle remaining cheese on top, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  6. Let sit for a few minutes before serving. Top with salsa, sour cream, and cilantro.
