Ingredients

For the Marinade:
  • 1 cup Italian dressing
  • 1 cup lime juice
  • 1 cup honey
  • 1 tablespoon chili powder
  • 2 to 3 teaspoons red pepper flakes (adjust to taste)
  • 2.5 to 3 pounds boneless skinless chicken tenders

Equipment

  • Mixing bowl
  • Whisk
  • Resealable plastic bag or shallow dish
  • Grill or oven
  • Meat thermometer

Method

Preparation Steps:
  1. In a mixing bowl, combine the Italian dressing, lime juice, honey, chili powder, and red pepper flakes. Use a whisk to blend the ingredients until well combined.
  2. Place the chicken tenders in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish, then refrigerate for at least 30 minutes.
  3. Preheat your grill or oven to medium-high heat. If grilling, remove the chicken from the marinade and discard the excess. Grill the chicken for about 5-6 minutes on each side, or until the internal temperature reaches 165°F. If using the oven, place the chicken on a baking sheet lined with parchment paper and bake for about 20-25 minutes, flipping halfway through.
  4. Once cooked, let the chicken rest for a few minutes before slicing. Serve with your choice of sides, such as rice, a fresh salad, or in a wrap.

Notes

  • For a milder dish, reduce chili powder and red pepper flakes.
  • To ensure juicy chicken, use a meat thermometer to check for doneness.
  • This dish can be marinated overnight for even more flavor.
  • Serve with a variety of sides like quinoa or roasted vegetables for a complete meal.
