Ingredients

  • 1 lb fresh green beans trimmed
  • 1 10-oz can Mexican Rotel tomatoes drained
  • 2 Tbsp olive oil
  • 1 tsp Southwestern seasoning

Equipment

  • Large skillet
  • Cutting board
  • Colander
  • Spatula

Method

  1. Start by washing your fresh green beans under cool running water. Trim the ends off each bean, ensuring they are ready to cook.
  2. In a large skillet, add the olive oil over medium heat. Allow the oil to warm up before adding the green beans.
  3. Once the oil is hot, add the trimmed green beans to the skillet. Sauté them for about 5-7 minutes until they start to become tender but still retain a slight crunch.
  4. After the green beans have softened, add the drained Rotel tomatoes to the skillet. Stir to combine the tomatoes with the green beans.
  5. Sprinkle the Southwestern seasoning over the mixture and stir well to ensure the beans are evenly coated. Cook for an additional 3-4 minutes, allowing the flavors to meld together.
  6. Remove the skillet from heat and transfer the Southwestern Green Beans to a serving dish. Enjoy them warm as a fantastic side dish to your favorite main course!

Notes

  • For a colorful twist, add corn and diced bell peppers in the summer.
  • In fall, toss in sautéed onions and garlic for added depth.
  • Sprinkle with crushed pecans during winter holidays for a festive crunch.
