Ingredients

  • 2 Tbsp Cornstarch
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Unsalted Butter softened
  • 1 cup Granulated Sugar
  • 1 Large Egg
  • 1/2 cup Sour Cream full fat
  • 1 tsp Vanilla Extract
  • 1/4 tsp Almond Extract
For the Frosting:
  • 3 cups Powdered Sugar
  • 3 Tbsp Half and Half then more as needed

Directions:
  1. Step 1: Preheat Your Oven - Start by preheating your oven to 350°F (175°C). This ensures that your cookies bake evenly and achieve that perfect soft texture.
  2. Step 2: Mix Dry Ingredients - In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, baking soda, and salt. Set this mixture aside.
  3. Step 3: Cream Butter and Sugar - In another bowl, use an electric mixer to cream together the softened unsalted butter and granulated sugar until light and fluffy. This should take about 2-3 minutes.
  4. Step 4: Add Egg and Sour Cream - Beat in the large egg, sour cream, vanilla extract, and almond extract until fully incorporated. The mixture should be smooth and creamy.
  5. Step 5: Combine Wet and Dry Ingredients - Gradually add the dry ingredient mixture into the wet ingredients, mixing until just combined. Be careful not to overmix, as this can affect the softness of the cookies.
  6. Step 6: Scoop the Dough - Using a cookie scoop or tablespoon, drop rounded balls of dough onto a parchment-lined baking sheet, leaving enough space between each cookie for spreading.
  7. Step 7: Bake - Bake in the preheated oven for 10-12 minutes, or until the edges are just starting to turn golden. The centers may look slightly underbaked—that's okay! They will continue to cook on the baking sheet after being removed from the oven.

  9. Step 9: Make the Frosting - While the cookies cool, prepare the frosting. In a mixing bowl, combine the powdered sugar, half and half, and vanilla extract. Mix until smooth and creamy, adding more half and half as needed to reach your desired consistency.
