Ingredients
  

  • 2 tablespoons Butter melted and slightly cooled
  • 2 tablespoons Brown sugar
  • 1 heaping tablespoon Granulated sugar
  • 1/4 teaspoon Vanilla extract
  • 1 large Egg yolk or 1 tablespoon whisked whole egg
  • 1/3 cup All-purpose flour
  • 1/8 teaspoon Baking soda
  • 1/8 teaspoon Salt adjust if using salted butter
  • 1/4 cup Semi-sweet chocolate chips
  • 1/2 Graham cracker
  • 3 pieces/segments Hershey's bar the classic choice for s'mores
  • 9 Mini marshmallows or 1 full-size marshmallow cut in half lengthwise

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the melted and slightly cooled butter, brown sugar, granulated sugar, and vanilla extract. Whisk them together until well blended.
  3. Add in the egg yolk (or whisked whole egg) to the mixture and whisk until fully incorporated.
  4. In another bowl, whisk together the all-purpose flour, baking soda, and salt. Slowly add the dry mixture to the wet ingredients, stirring until just combined.
  5. Gently fold in the semi-sweet chocolate chips and crushed graham cracker until they're evenly distributed throughout the dough.
  6. Scoop the dough onto a parchment-lined baking sheet, forming a single cookie that’s about 1/2 inch thick.
  7. Top the cookie with segments of the Hershey's bar and place the mini marshmallows on top. Press them down slightly to ensure they stick.
  8. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are golden but the center remains soft.
  9. For that perfect toasted marshmallow finish, switch the oven to broil for an additional 1-2 minutes. Keep a close eye to prevent burning!
  10. Remove the cookie from the oven and let it cool for a few minutes before enjoying.

Notes

  • Store leftovers in an airtight container at room temperature for up to 2 days.
  • Reheat in the microwave for about 10-15 seconds to regain the gooey texture.
  • For a chewier cookie, slightly underbake it; the residual heat will continue to cook the cookie.
