  • 2 large eggs hard-boiled
  • 14 oz smoked salmon high-quality
  • 3 tablespoons capers
  • 1 small red onion thinly sliced
  • 1 whole lemon juiced and wedges for garnish

Method
 

  1. Start by placing the two eggs in a pot and covering them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot and remove it from the heat. Let the eggs sit in the hot water for about 9-12 minutes. After this time, transfer the eggs to a bowl of ice water to cool.
  2. While the eggs are cooling, thinly slice the red onion and set it aside. Next, cut the lemon in half and juice one half, reserving the other half for garnish.
  3. Once the eggs are cool, peel them and slice them in half. On a serving platter, arrange the smoked salmon elegantly. Scatter the capers and sliced red onion over the top.
  4. Place the halved hard-boiled eggs on the platter. Drizzle fresh lemon juice over the entire dish for added brightness. Garnish with wedges of lemon for an extra pop of color and flavor.
  5. This dish can be served immediately. Pair it with some crusty bread or crackers, if desired.

  • For a low-carb option, serve the salmon and eggs on a bed of mixed greens instead of bread.
