  • 1/2 cup light-colored corn syrup or brown rice syrup, agave, or honey
  • 1 teaspoon vanilla extract
  • 3 cups Corn Chex
  • 1/4 cup unsweetened natural cocoa powder or to taste

  1. Gather all your ingredients. In a mixing bowl, combine the creamy peanut butter, light-colored corn syrup, and vanilla extract. Stir until the mixture is smooth and well combined.
  2. Gently fold in the Corn Chex, ensuring each piece is coated with the peanut butter mixture.
  3. Sprinkle the unsweetened cocoa powder over the mixture. Stir gently until evenly distributed. Adjust sweetness with zero-calorie sweetener if desired.
  4. Add a pinch of Kosher or sea salt to enhance the flavor.
  5. Spread the mixture evenly onto a baking sheet lined with parchment paper. Let it cool for about 30 minutes.
  6. Once cooled, break the mix into pieces and store it in an airtight container. Enjoy!
