School Cafeteria Yeast Rolls

Ingredients
  

  • 2 Tbsp yeast
  • 1 cup warm water for activating yeast
  • 6 cups bread flour
  • 11 Tbsp instant non-fat dry milk powder
  • 6 Tbsp sugar
  • 1 Tbsp salt
  • 6 Tbsp vegetable oil
  • 1 cup water additional moisture for dough

Method
 

  1. In a small bowl, combine the warm water and yeast. Allow it to sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, whisk together the bread flour, dry milk powder, sugar, and salt. Make a well in the center.
  3. Pour the activated yeast mixture along with the vegetable oil and additional water into the well of the dry ingredients. Mix until combined.
  4. Transfer the dough to a floured surface and knead it for about 8-10 minutes, until it becomes smooth and elastic.
  5. Place the kneaded dough in a greased bowl and cover it with plastic wrap or a kitchen towel. Let it rise in a warm place for about 1 to 1.5 hours, or until it has doubled in size.
  6. Once the dough has risen, punch it down to release the air. Divide the dough into equal pieces (about 12-15) and shape them into balls.
  7. Cover the shaped rolls with a kitchen towel and let them rise for another 30-45 minutes until they have puffed up.
  8. Preheat your oven to 375°F (190°C).
  9. Once the rolls have risen, bake them in the preheated oven for 15-20 minutes, or until they are golden brown on top.
  10. Remove the rolls from the oven and let them cool slightly on a wire rack. Serve warm.

Notes

  • Store rolls in an airtight container for up to 3 days.
  • Freeze cooled rolls in a freezer-safe bag for up to 3 months.
  • Reheat frozen rolls in a 350°F (175°C) oven for about 10 minutes.
