Ingredients
  

For the Base:
  • 1 cup all-purpose flour
  • 1 cup confectioners’ sugar
  • 1 cup creamy peanut butter
  • 1 cup unsalted butter softened
  • 2 cups marshmallows about (most of one 10-ounce bag; use mini if you prefer bars not as thick)
  • 1 bag peanut butter chips one 10-ounce bag
  • 1 cup light-colored corn syrup not lite
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 1.5 cups Rice Krispies or similar crispy rice cereal
  • 1 cup salted peanuts or salted honey roasted peanuts

Instructions
  1. Step 1: Prepare Your Baking Pan - Line a 9x13 inch baking pan with parchment paper, leaving some overhang on the sides.
  2. Step 2: Mix the Base - In a large mixing bowl, combine the softened butter and creamy peanut butter. Mix until smooth, then add flour and confectioners' sugar.
  3. Step 3: Add Marshmallows and Peanut Butter Chips - Gently fold in the marshmallows and peanut butter chips until evenly distributed.
  4. Step 4: Prepare the Topping - In a microwave-safe bowl, combine corn syrup, 2 tablespoons of unsalted butter, and vanilla extract. Microwave until bubbling.
  5. Step 5: Combine and Fold - Pour the corn syrup mixture over the peanut butter base and stir. Fold in the Rice Krispies and salted peanuts.
  6. Step 6: Spread in the Pan - Transfer the mixture to the prepared baking pan and spread it evenly. Press down firmly.
  7. Step 7: Chill and Set - Cover with plastic wrap and chill in the refrigerator for at least 2 hours.
  8. Step 8: Cut and Serve - Lift the bars out using the parchment paper and cut into squares or rectangles.

Notes

  • For a gluten-free option, use a gluten-free flour blend.
  • For a sweeter treat, add more confectioners' sugar.
  • Try almond butter instead of peanut butter for a unique flavor.
