Ingredients
  

  • 5 cups old fashioned rolled oats not quick oats
  • 1 cup sliced almonds
  • 1 cup unsweetened coconut flakes
  • ½ cup cocoa powder
  • ½ cup maple syrup
  • ½ cup brown sugar
  • 4 teaspoons pure vanilla extract
  • 1 cup coconut oil melted
  • 1 teaspoon salt
  • 1 ½ cups dark chocolate chips
  • Maldon Sea Salt Flakes or a chunky sea salt, for topping

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, sliced almonds, coconut flakes, cocoa powder, and salt. Stir until evenly mixed.
  3. In a separate bowl, whisk together the melted coconut oil, maple syrup, brown sugar, and vanilla extract until well combined.
  4. Pour the wet mixture over the dry ingredients and mix until the oats and nuts are well coated.
  5. Line a baking sheet with parchment paper and spread the granola mixture evenly, pressing it down slightly.
  6. Bake for about 25-30 minutes, stirring halfway through until golden brown.
  7. Let it cool for about 10 minutes, then sprinkle dark chocolate chips over the warm granola.
  8. Sprinkle with Maldon Sea Salt Flakes before the granola cools completely.
  9. Allow to cool completely, break into clusters, and store in an airtight container.

  • Store granola in an airtight container at room temperature for freshness.
  • Freeze portions in resealable bags for longer storage.
  • Consider making a double batch to enjoy throughout the week!
