Ingredients
  

For the Teriyaki Sauce:
  • 1 cup fresh pineapple chopped
  • 1 inch fresh ginger peeled and grated
  • 2 cloves garlic minced
  • 1/2 cup soy sauce low-sodium if preferred
  • 3 tablespoons brown sugar light or dark
  • 1/2 teaspoon sesame oil adds depth of flavor
For the Salmon:
  • 4 filets salmon about 4-6 oz each, skin-on or skinless based on preference
  • 2 cups fresh pineapple divided
  • 1 tablespoon olive oil for cooking the salmon
  • 1 sprig fresh mint or basil for garnish

Method
 

Directions:
  1. Step 1: Prepare the Teriyaki Sauce. In a medium saucepan, combine 1 cup of fresh pineapple (chopped), grated ginger, minced garlic, soy sauce, brown sugar, and sesame oil. Stir well over medium heat until the sugar dissolves and the mixture begins to simmer. Allow it to reduce for about 5-7 minutes until it thickens slightly. Remove from heat and let it cool.
  2. Step 2: Marinate the Salmon. Place the salmon filets in a mixing bowl and pour half of the cooled teriyaki sauce over them. Toss gently to coat. Let the salmon marinate for about 15-20 minutes to soak up all those delicious flavors.
  3. Step 3: Cook the Salmon. In a skillet or grill pan, heat the olive oil over medium-high heat. Once hot, add the marinated salmon filets, skin-side down. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Baste with the remaining teriyaki sauce during cooking for extra flavor.
  4. Step 4: Serve and Garnish. Once cooked, remove the salmon from the skillet and place it on a serving platter. Drizzle the remaining teriyaki sauce over the top. Garnish with fresh mint or basil and serve with the remaining pineapple on the side.

Notes

  • For a sweeter sauce, add a touch of honey or maple syrup.
  • Swap salmon for other fish like trout or halibut, or use chicken breast if preferred.
  • For gluten-free options, substitute soy sauce with tamari.
