- Gather all your ingredients. If using whole roasted red peppers, slice them into strips. Ensure mozzarella is sliced and pesto is ready.
- Lay out slices of bread on a cutting board. Spread a tablespoon of pesto on one side of each slice. On two slices, layer roasted red peppers, fresh mozzarella, fresh basil, and sun-dried tomatoes if using. Top with remaining slices of bread, pesto side down.
- Spread softened butter on the outside of each sandwich to achieve a crispy, golden crust.
- If using a panini press, cook according to instructions until golden and cheese is melted. In a skillet, heat over medium, press down with spatula, and cook for about 3-4 minutes on each side.
- Remove grilled sandwiches from heat. Let sit for a minute before slicing in half. Serve warm and enjoy!
