Ingredients

  • 1 head cauliflower cut into bite-sized pieces
  • 30 cloves garlic (jarred garlic cloves work perfectly)
  • 3 tablespoons olive oil good quality
  • Salt to taste
  • Freshly ground black pepper to taste

Equipment

  • Baking sheet
  • Mixing bowl
  • Sharp knife
  • Oven

Method

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the cauliflower by removing the outer leaves, cutting it into quarters, and slicing each quarter into bite-sized florets.
  3. Toss the cauliflower florets with the garlic cloves, olive oil, salt, and pepper in a large mixing bowl until well-coated.
  4. Spread the cauliflower and garlic mixture evenly on a baking sheet, ensuring enough space between pieces.
  5. Roast in the oven for 25-30 minutes, stirring halfway through, until tender and golden brown.
  6. Once roasted, taste and adjust seasoning if necessary. Serve warm as a side dish or enjoy on its own.

Notes

  • For a low-oil option, reduce olive oil to 1-2 tablespoons.
  • Add fresh herbs like thyme or rosemary before roasting for extra flavor.
  • Mix in other vegetables like carrots or bell peppers for a colorful medley.
