  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 30 ounces pinto beans (2 cans of 15 oz each), rinsed and drained
  • ½ cup water
  • 1 tablespoon lime juice

Method
 

Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes or until the onion is soft and translucent.
  2. Stir in the minced garlic, chili powder, ground cumin, smoked paprika, and salt. Cook for an additional minute until the garlic is fragrant and the spices are well combined with the onion.
  3. Add the rinsed and drained pinto beans to the skillet. Stir well to combine everything, ensuring the beans are coated with the spice mixture.
  4. Pour in ½ cup of water and bring to a simmer. This will help soften the beans and make them easier to mash.
  5. Once the beans are heated through, use a wooden spoon or a potato masher to mash the beans to your desired consistency.
  6. Remove the skillet from heat and stir in 1 tablespoon of lime juice. This brightens up the flavors.
  7. Your delicious refried beans are ready to be served! Enjoy them in tacos, burritos, or simply with tortilla chips.

Notes

  • Adjust spice levels to your taste; add more chili powder for extra heat!
  • For a vegetarian twist, consider adding sautéed bell peppers or mushrooms.
  • These beans are versatile; mix in cheese or use them as a dip.
  • If short on time, canned beans work perfectly.
