Ingredients
  

  • 15.25 oz Red velvet cake mix
  • 8 tbsp Butter melted
  • 1 Egg
  • 1 tsp Vanilla extract
  • 4 oz Neufchatel cheese light cream cheese, room temperature
  • 3/4 cup White chocolate chips
  • 3/4 cup M&Ms

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line a cookie sheet with parchment paper.
  3. In a large mixing bowl, combine the melted butter, Neufchatel cheese, egg, and vanilla extract. Blend until smooth and creamy.
  4. Gradually add the red velvet cake mix to the wet ingredients and mix until just combined.
  5. Gently fold in the white chocolate chips and M&Ms with a spatula.
  6. Using a cookie scoop or tablespoon, portion out the cookie dough onto the prepared baking sheet.
  7. Bake for about 10-12 minutes, or until the edges are set but the centers are still soft.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
