Ingredients
  

  • 1 head cauliflower cut into large 1-inch 'steaks'
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 3 cloves garlic minced
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 2 tablespoons Greek yogurt plain
  • 1 tablespoon Dijon mustard
  • 1/2 cup whole-grain panko breadcrumbs
  • 2 tablespoons parsley fresh, chopped

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C) to achieve a lovely golden crust.
  2. Step 2: Slice the cauliflower into large 1-inch steaks, aiming for 4 to 6 steaks.
  3. Step 3: In a mixing bowl, combine olive oil, kosher salt, black pepper, minced garlic, basil, oregano, and thyme.
  4. Step 4: Brush both sides of the cauliflower steaks with the herb-oil mixture.
  5. Step 5: Mix Greek yogurt and Dijon mustard until smooth, then spread over the cauliflower steaks.
  6. Step 6: Sprinkle panko breadcrumbs over the coated cauliflower and press gently to adhere.
  7. Step 7: Roast on a baking sheet for about 25-30 minutes, flipping halfway through.
  8. Step 8: Garnish with fresh chopped parsley and serve warm.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven at 350°F for 10-15 minutes to restore crispiness.
  • For best results, do not freeze, as the texture may become mushy.
