Ingredients
  

For the Queso Blanco Dip:
  • 2 Tbsp butter
  • 1/4 cup finely chopped onion
  • 1/4 tsp crushed garlic
  • 2 Tbsp all-purpose flour
  • 1 1/4 cups whole milk (for a thicker sauce, use less)
  • 8 oz finely shredded Monterey Jack cheese
  • 1 Roma tomato seeds removed and diced
  • 2 Tbsp canned, diced green chilis
  • 1 Tbsp chopped fresh cilantro

Cooking Instructions
  1. Begin by melting the butter in your medium saucepan over medium heat. Once melted, add the finely chopped onion and sauté until it becomes translucent, about 3-4 minutes. Next, stir in the crushed garlic and cook for an additional minute, allowing the fragrant aroma to fill your kitchen.
  2. Sprinkle the flour over the sautéed onions and garlic, stirring constantly for about 1 minute. This step helps eliminate the raw flour taste and creates a thickening base for your dip.
  3. Slowly pour in the whole milk while continuously whisking the mixture. This will help you avoid lumps and create a smooth consistency. Keep stirring until the mixture thickens and bubbles gently, which should take about 3-5 minutes.
  4. Reduce the heat to low and gradually add the finely shredded Monterey Jack cheese, stirring until it melts completely and the dip is smooth. Take your time with this step, as it’s crucial for achieving that creamy texture.
  5. Once the cheese is melted, gently fold in the diced Roma tomato, canned green chilis, and chopped fresh cilantro. Mix everything until combined, and season with salt and pepper to taste.
  6. Transfer your Queso Blanco Dip to a serving bowl and serve warm with tortilla chips, fresh veggies, or even drizzled over your favorite dishes. Enjoy every cheesy bite!
