Ingredients
  

  • 1 cup cottage cheese (220g) - The creamy base packed with protein.
  • 3 tablespoons cocoa powder (16g) - For that rich chocolate flavor.
  • 2 tablespoons whey protein powder (12g) - Adds extra protein for muscle support.
  • 3 tablespoons allulose (30g) - A low-calorie sweetener that mimics sugar.
  • 1 teaspoon vanilla extract Enhances the flavor profile.

Method
 

  1. Start by gathering all of your ingredients and tools. This makes the preparation process smooth and enjoyable.
  2. In a blender or food processor, add the cottage cheese, cocoa powder, whey protein powder, allulose, and vanilla extract. Blend on high until the mixture is completely smooth and creamy.
  3. After blending, taste the pudding. If you prefer it sweeter, feel free to add an additional tablespoon of allulose or your sweetener of choice, then blend again.
  4. Transfer the Protein Pudding to a mixing bowl or airtight container. Cover it and place it in the refrigerator for at least 30 minutes to allow the flavors to meld and the pudding to thicken.
  5. Once chilled, give the pudding a good stir. Serve it in individual bowls or jars and enjoy it as is or top with your favorite toppings such as berries, nuts, or a dollop of yogurt.

Notes

  • Store Protein Pudding in an airtight container in the fridge for up to 5 days.
  • For a dairy-free option, substitute cottage cheese with silken tofu or plant-based yogurt.
  • Microwave it in short bursts if you prefer it warm, but it's best enjoyed chilled!
