Ingredients
  

For the Chicken Bites:
  • 1.5 pounds boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 eggs lightly beaten
  • 2 cups mini pretzel twists crushed
  • 1 teaspoon garlic powder
  • ½ cup buffalo wing sauce
  • 2 tablespoons unsalted butter melted
  • kosher salt and pepper to taste
  • chives for garnish
  • 1 cup plain Greek yogurt or sour cream for the dipping sauce
  • ½ cup mayonnaise for the dip
  • ½ cup milk to thin the sauce
  • ½ cup chopped fresh cilantro for the dip
  • 3 tablespoons fresh chives or 1 tablespoon dried chives
  • 2 tablespoons fresh dill or 2 teaspoons dried dill weed
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon garlic powder for the dip
  • ½ teaspoon onion powder

Method
 

Instructions:
  1. Step 1: Preheat your oven to 400°F (200°C) and cut the chicken breasts into bite-sized pieces. Season with kosher salt and pepper.
  2. Step 2: In a mixing bowl, combine the crushed mini pretzel twists and garlic powder.
  3. Step 3: In another bowl, beat the eggs until lightly frothy.
  4. Step 4: Dip each piece of chicken into the beaten eggs, then roll in the pretzel mixture.
  5. Step 5: Bake the chicken bites for 20-25 minutes until golden brown and fully cooked.
  6. Step 6: Melt the unsalted butter in a saucepan and stir in the buffalo wing sauce.
  7. Step 7: Toss the baked chicken in the buffalo sauce.
  8. Step 8: Combine the Greek yogurt, mayonnaise, milk, cilantro, chives, dill, lemon juice, garlic powder, and onion powder in a bowl.
  9. Step 9: Serve the chicken bites hot, garnished with chives and cilantro, with the dipping sauce on the side.
