Ingredients
  

For the Filling:
  • 1 pound Italian sausage
  • 6 bell peppers (any color) I used red, green, and yellow
  • 1 onion diced
  • 4 garlic cloves minced
  • 8 ounces crimini mushrooms diced
  • 3 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1/2 cup fresh grated Parmesan cheese
  • 6 ounces grated mozzarella cheese
  • Salt to taste
  • Pepper to taste

Method
 

Cooking Instructions:
  1. Step 1: Preheat the Oven - Start by preheating your oven to 375°F (190°C) so it’s hot and ready for your delicious stuffed peppers.
  2. Step 2: Prepare the Peppers - Carefully slice the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish. If they don’t stand well, you can trim the bottom slightly to create a flat surface.
  3. Step 3: Cook the Sausage - In a large skillet over medium heat, add the Italian sausage. Cook until browned, breaking it apart with a wooden spoon as it cooks. Drain any excess fat.
  4. Step 4: Sauté the Vegetables - To the same skillet, add the diced onion, minced garlic, and diced crimini mushrooms. Sauté until the vegetables are tender and fragrant, about 5-7 minutes.
  5. Step 5: Combine the Filling - Stir in the tomato paste, dried oregano, salt, and pepper. Cook for another 2 minutes until everything is well combined. Remove from heat, then stir in the fresh grated Parmesan and half of the grated mozzarella cheese.
  6. Step 6: Stuff the Peppers - Spoon the sausage and vegetable mixture into the prepared bell peppers, packing it tightly. Top each pepper with the remaining mozzarella cheese.
  7. Step 7: Bake - Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  8. Step 8: Serve and Enjoy - Once done, remove the stuffed peppers from the oven and let them cool for a few minutes before serving. Enjoy your Pizza Stuffed Bell Peppers warm, garnished with fresh basil or a sprinkle of extra cheese if desired!
