Ingredients
  

  • 1 1/2 cups warm water Activates the yeast for the dough.
  • 2 tablespoons light brown sugar Adds sweetness and helps to feed the yeast.
  • 1 package active dry yeast The leavening agent that makes the dough rise.
  • 3 ounces unsalted butter melted, provides richness to the dough.
  • 2 1/2 teaspoons kosher salt Enhances flavor.
  • 4 to 5 cups all-purpose flour The base for the dough.
  • Canola oil For greasing the bowl and baking sheet.
  • Pepperoni slices cut into small pieces, the classic pizza topping.
  • Shredded mozzarella cheese The gooey, melty filling.
  • 5 quarts water Used for the baking soda bath.
  • 3/4 cup baking soda Gives pretzels their unique flavor and color.
  • 1 whole egg beaten with 1 tablespoon cold water, an egg wash for a beautiful golden finish.
  • Coarse sea salt For sprinkling on top for added flavor.
  • Pizza sauce for serving, the perfect dip for these bites.

Method
 

  1. Start by combining the warm water, light brown sugar, and yeast in a mixing bowl. Let it sit for about 5-10 minutes until it becomes frothy.
  2. Once the yeast is frothy, add in the melted butter and kosher salt. Gradually stir in 4 cups of all-purpose flour, mixing until a dough starts to form.
  3. Transfer the dough to a floured surface and knead for about 5-7 minutes until it's smooth and elastic. Form it into a ball and place it in a greased bowl. Cover it with plastic wrap and let it rise in a warm place for about an hour or until it doubles in size.
  4. Once the dough has risen, punch it down and divide it into small pieces, about the size of a golf ball. Flatten each piece slightly and place a few pieces of pepperoni and mozzarella cheese in the center. Fold the dough over to seal the filling inside and roll it into a ball.
  5. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  6. In a large pot, bring 5 quarts of water to a gentle boil. Slowly whisk in the baking soda until dissolved.
  7. Carefully drop the pretzel bites into the boiling soda bath, cooking them for about 30 seconds on each side. Remove them with a slotted spoon and place them on the prepared baking sheet.
  8. Brush the tops of the pretzel bites with the beaten egg wash and sprinkle with coarse sea salt. Bake in the preheated oven for 12-15 minutes or until they are golden brown.
