Pesto, Artichoke, and Havarti Grilled Cheese

Ingredients
  

  • 2 tablespoons butter softened
  • 4 slices whole-grain bread recommended Eureka! Organic Bread
  • 4 tablespoons Spinach Basil Pesto
  • 4 slices Arla Dofino Creamy Havarti or 4 ounces, grated
  • 2/3 cup sliced artichoke hearts drained
  • Sea salt to taste

Equipment

  • Skillet or Griddle
  • Spatula
  • Butter knife
  • Measuring spoons
  • Cutting board

Method
 

  1. Gather all your ingredients. Drain the artichoke hearts and slice them if necessary. Grate your Havarti cheese if you haven’t chosen pre-sliced.
  2. Spread 1 tablespoon of softened butter on one side of each slice of whole-grain bread.
  3. On the unbuttered side of two slices of bread, spread 2 tablespoons of spinach basil pesto. Layer 2 slices of Havarti cheese on top, followed by 1/3 cup of sliced artichoke hearts. Finish with another 2 slices of Havarti and top with the remaining slices of bread, buttered side up.
  4. Place your skillet or griddle over medium heat. Once hot, carefully place the assembled sandwich in the skillet.
  5. Cook the sandwich for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted. Use a spatula to flip the sandwich gently.
  6. Once cooked, remove the sandwich from the skillet. Sprinkle a pinch of sea salt on top, slice in half, serve warm, and enjoy!

Notes

  • Make sure your butter is softened for easy spreading.
  • For an extra flavor boost, add a sprinkle of garlic powder to the butter before spreading.
  • If you prefer a crispier sandwich, use a bit more butter.
